Chicken Meatballs



1 tablespoon olive oil

2 tablespoons red bell peppers minced

2 tablespoons onion minced

1/4 cup panko breadcrumbs

2 tablespoons freshly grated Parmesan cheese

1 egg

1 garlic minced

1/4 teaspoon kosher salt

1/2 teaspoon pepper

1/2 teaspoon dried oregano

1/4 teaspoon crushed red pepper flakes

1 pound ground (organic) chicken



Heat the olive oil in a nonstick skillet over medium-high heat. Add the peppers and onions and saute for 3-5 minutes or until softened. Cool to room temperature.

Mix the peppers and onions with the breadcrumbs, cheese, egg, garlic, salt, pepper, oregano, and crushed red pepper flakes.

Add the meat and combine. Do not over mix, but be sure seasonings are well dispersed.

Coat a baking sheet with rimmed edges with non-stick spray or line with heavy-duty foil and roll meatballs into 1-inch balls. Place on the prepared pan and bake at 400 degrees F for 25 minutes
