Ingredients
2 pounds lean ground beef (80/20 mix)
1 cup finely chopped onion
1 cup plain bread crumbs
1 teaspoon salt
½ teaspoon paprika
½ teaspoon celery salt
¼ teaspoon black pepper
2 eggs, slightly beaten
1 cup milk
½ lb. medium or sharp cheddar cheese (cut into ½" cubes)

Instructions
Preheat oven to 350 degrees F.
In a large mixing bowl combine the beef, onion, bread crumbs, salt, paprika, celery salt, black pepper, eggs, and milk. Mix until combined well.
Cut cheese into ½" cubes and fold in to the meat mixture.
Grease a 9" x 5" x 3" loaf pan with vegetable cooking spray.
Place meat mixture into pan and spread until even. Take a fork and poke it a few times to make sure there are no air holes.
Bake at 350 degrees F for 60 minutes.
Let stand for 10 minutes once removed from the oven.
Drain any excess fat from the loaf.
Slice and serve with homemade mashed potatoes.
