4 cup s cooked fries
Cheese Sauce
1 tbsp almond flour sub your flour of choice
1 cup unsweetened cashew milk sub any unsweetened non-dairy milk
2 slices Chao Original Vegan Cheese
2 slices Follow Your Heart American Vegan Slices
1/4 cup Daiya Shredded Mozzarella Cheese
garlic powder
onion powder
sea salt
Mock Crab
1 can heart of palm*
kelp granules
garlic powder
onion powder
cajun seasoning
Old Bay seasoning

Cheese Sauce
In medium sauce pan, add flour. Slowly stir in milk. I said slowly! Flick wrist (whisk) to combine. Stir constantly until all milk is added. Cook for 2-3 min or until mixture starts to thicken.
Add cheeses, stir until all cheese has melted (about 5 min). Add an "ancestor shimmy" of all spices and combine. Taste and adjust seasonings as needed. Cook for another 2-3 minutes. Remove from heat, set aside.
Mock Crab
Remove heart of palm from can. Press with paper towel to remove excess liquid.
Use two forks to shred heart of palm into a "crab like" consistency.
Lightly grease pan over medium high heat. Add heart of palm and spread out into one layer. Cook unbothered for 2-3 minutes. Add all spices and cook for 5 minutes more.
Assemble cooked fries in one layer on flat dish. Top with mock crab and drizzle with cheese sauce. Sprinkle old bay and parsley for an added finish. Enjoy!
